Traditional Moroccan Breakfast at the Riad: A Ritual in Its Own Right

In Morocco, breakfast is not a functional meal. It is a ritual. It takes time, it mobilises the kitchen from dawn, and it speaks to the deep hospitality of this country. Served on the rooftop at Riad Darino with the Medina waking at your feet, it remains for many of our guests the most vivid memory of their stay.

The elements of a traditional Moroccan breakfast

Msemen and rghaïf

Msemen is a flaky flatbread, folded into a square and cooked in a dry pan. Its texture is crispy outside and soft inside. Eaten hot, dipped in argan oil, honey, or amlou.

Baghrir: the thousand-hole pancake

Baghrir is made from fine semolina and yeast. Its spongy, honeycomb surface absorbs warm honey and melted butter perfectly. It cooks on one side only — it's ready when the bubbles have burst and the surface has dried.

Amlou: the Berber nut butter

Amlou is a traditional Berber preparation made from ground roasted almonds, pure argan oil, and honey. Its texture resembles a thick, smooth nut butter; its flavour is deeply nutty with a slight vegetal bitterness. It is one of the most precious products in Moroccan gastronomy.

Bread, honey, olives and spreads

A good Moroccan breakfast also includes traditional oven bread (khobz), herb-marinated olives, fresh cheese (jben), home-made jam — often fig, bitter orange or Damascene rose — and sometimes dates and walnuts.

Mint tea and barley coffee

Moroccan mint tea is Gunpowder green tea infused with fresh mint and sugar, poured from a height to create a light foam. It is sweet by nature. Alongside, you will often find barley coffee (café Spris), milder and less acidic than espresso, with a roasted hazelnut flavour.
